Madagascar represents over 85% of the worldwide Vanilla Beans production. It is produced by approximately 40,000 farmers, holding a unique position on the world market.

As De Monchy Natural Products, we have implemented our own production of green vanilla beans in Madagascar and  we are working in close partnership with preparers to complete our current demands for export.

Farmers take care of the Vanilla orchids for months before they blossom. Once this happens, they only have within 8 to 12 hours to pollinate each of them by hand in order to obtain a Vanilla bean from it.

Once harvested, the vanilla beans preparation starts with the sorting of the green vanilla beans. After sorting, the green vanilla beans are washed and  scalded with a water temperature of about 60° C or 140° F.

The next step is sweating; the pods are wrapped in woolen blankets. The fermentation starts and the pods turn into their dark  brown characteristic color.

After the sweating process, the beans are laid down to be slowly dried naturally in the sunlight. The total process takes about three months.
