This is the "upscale" vanilla with the highest moisture level. Rare, very oily and soft, black to slightly brown color, it has a chocolate-like flavor and is easy to split. A typical bean weighs from 3 to 5 grams and measures between 14 and 20 cm in length.
This is a high quality vanilla. It differs from the black vanilla by its lower moisture content and the color is more brown, sometimes reddish in places. A bean weighs from 2 to 4 grams and measures between 14 and 20 cm in length.
The best quality vanilla in the extraction group. It differs from the brown vanilla because of its lower moisture content and a more reddish color. A bean weighs in between 2 - 3 grams and measures between 13 and 20 cm in length. These are offered in split beans and whole beans.
These are extraction grade beans with a lower content of Vanillin. Short vanilla beans measuring 10-12 cm belong to this group.
Grade 3 (Cuts):
This category is a result of the beans that are not selected for the previous qualities, these have a lower moisture and vanillin content. Small, cut and broken beans can be found in this group.
